This is the disclaimer for Big Bites Tiny Kitchen. It exists to be honest with you about what this site is and what it is not.
About me
I am Michele D'Aulerio. I am a home cook, not a chef. I did not attend culinary school. I am not a registered dietitian, a nutritionist or a doctor. Everything on this site reflects my own experience, taste and curiosity in my own kitchen. It does not reflect professional credentials.
Recipes
The recipes on this site are recipes I cook for myself. I test them on my own equipment with the ingredients I have on hand.
What that means for you:
- Your kitchen is not mine. Ovens vary. Stoves vary. Your flour might absorb differently than mine. Your pan might run hotter. Treat my times and temperatures as a starting point, not a guarantee.
- Substitutions change things. If you swap ingredients, the result will be different. That is not a flaw in the recipe. That is just cooking.
- Read the recipe all the way through before you start. Small thing, saves dinner more often than people admit.
Allergies, sensitivities and dietary restrictions
If you, or anyone you are cooking for, has a food allergy, sensitivity or dietary restriction, it is your responsibility to read every ingredient and check it against your needs. I cannot anticipate every allergen in every recipe. Cross-contamination, ingredient sourcing and label changes from manufacturers are out of my hands.
Not medical or nutritional advice
Nothing on this site is medical, nutritional or dietary advice. If you are managing a health condition, are pregnant or have specific dietary needs, talk to a qualified professional. Do not rely on a food blog for that.
Restaurant reviews
The Dining Out posts are personal accounts of meals I had on a particular day at a particular place. They are not professional reviews. They are not comprehensive. They reflect:
- My experience on the visit I am writing about.
- The dishes I happened to order.
- The version of the restaurant that existed at the time.
Restaurants change. Chefs leave. Menus turn over. Service has good nights and bad. A place I loved last year may be different by the time you read about it. Use the reviews as a starting point, not a guarantee of the experience you will have.
I pay for my own meals unless I explicitly say otherwise in the post. I am not paid by restaurants to write about them, and I do not accept comped meals in exchange for coverage.
